If you love fresh Mexican-inspired flavors, this flavorful and juicy Salsa Fresca Chicken dish will fit the bill! This is one my favorite dinners because there’s no cooking involved- you just throw it all in the pan and it does it’s thing. You can even go about your night while all this gloriousness roasts in the oven. And it comes out pretty dang good if I do say so myself.
Just prepare the chicken, and pair with any of your favorite sides like a salad, Spanish-style rice, black beans, corn, or even roasted vegetables. So, let’s just get right into the recipe so you guys can be on your merry way and have dinner on the table quick!
Salsa Fresca Chicken Recipe
Prep Time: 5-10 minutes, Cook Time: 35-45 minutes, Makes: 2-3 Servings
Ingredients
2 Large Chicken Breasts
1 1/2 Cups Pico de Gallo (of choice, I got mine in the fresh prepared veggie section from Von’s)
1/2 cup Monterrey Jack Cheese
1/2 Tbsp Garlic Powder
1/2 Tbsp Cumin
Sea Salt and Ground Pepper to taste
Directions
Preheat oven to 375, and like a baking sheet or casserole dish with tinfoil.
Place chicken breasts on the pan, and sprinkle with garlic powder, cumin, sea salt, and ground pepper.
Spoon pico de gallo on top of each chicken breast.
Sprinkle with cheese.
Cook in the oven for 35-45 minutes until chicken is cooked through.
And there you have it, a fresh dinner that’s super easy to put together and even more easy to clean up.
