Basic Energy Bite Recipe

If you are a busy, active person, looking for good and yummy fuel, the basic energy bite is the perfect snack for you. Not only are they packed with nutritional goodness that comes along with chia seeds, flax seeds, hemp seeds, oats, peanut butter; but also, so so delicious!


I mean they’re basically little healthy cookie dough balls- nothing get’s better than that.


I make these treats on Sunday evening, they take 10 minutes total to throw together and the rest of the week I’ll munch on these for breakfast on the run or for a mid-afternoon snack.


To get started, get all of your ingredients together. Choosing your favorite nut butter to include in the recipe.

I’ve found that a thicker peanut butter like JIF will hold the energy bites together and get solid enough to hold- whereas many organic peanut butters are more liquidy and won’t hold shape. I have found that Justin’s nut butter is thicker and does hold pretty well in energy bites if you’re looking for an organic peanut butter. It’s also non-GMO, and use sustainably sourced palm oil, amongst many other good things. You can check them out here.


Regardless, just know you may have to experiment to find a butter of choice that you like most.


Throw all of your ingredients in a bowl and mix. Throw the mix in the fridge for 30 minutes.

Watch a rerun of The Office, talk to your mom on the phone, do a workout, stare at the wall- whatever it is, you got 30 minutes. After your 30 minutes, remove your dough from the fridge, and roll it into 1-inch balls.



Place each ball into an airtight container. You don’t have to do this but I like lining my Tupperware with plastic wrap because it makes clean up easy later.


Finally, put your energy bites in the fridge, good for up to 1 month! Or if you just can’t resist- go ahead and dig in!


Basic Energy Bite Recipe

Prep: 5 mins. Cool: 30 mins. Assembly: 5 mins. Makes 12-15 energy bites.

Ingredients

  1. 1 cup peanut butter (or any nut butter of your preference)

  2. 3/4 cup rolled oats

  3. 1/4 cup ground flaxseeds

  4. 1 Tablespoon hemp seeds

  5. 1 Tablespoon chia seeds

  6. 1/2 cup semisweet chocolate chips

  7. 1/2 cup shredded coconut

  8. 2 tablespoons honey or agave

Directions

  1. Combine all ingredients in a bowl.

  2. Refrigerate 30 mins.

  3. Remove from fridge, and roll into 1-inch balls.

  4. Store energy bites refrigerated in an airtight container for up to 1 month.
